Shrimp!

I headed to work at 4 and brought a few snacks with me to tide me over until dinner, which was a very good decision because Tyler didn’t end up getting home until 8:30pm! I brought a Caramel Nut Brownie Luna Bar, 5 oz of grapes, and 3 Dove Dark Chocolates (that I actually ended up saving for after dinner).

I worked on a journal entry for my Philosophy of Religion class while I was at work. When I got home I got right to making dinner for Tyler and I, because I thought he was going to be home at 7:30. I got most everything cut up and measured out for my salad, but then I got a text from Tyler saying to expect him at 8, so I took a break from getting dinner ready for a little bit. I got started again around 7:40, and had both our salads put together minus the dressing and croutons and such, when I get a call, Tyler won’t be home until 8:30. At that point I stuck both the plates of salad in the fridge and went to read blogs! When Tyler got home I got out the salads and we put the finishing touches on. My salad included:

  • 2 oz of green leaf lettuce
  • 3 oz of shrimp
  • 1/2 oz of shredded colby jack cheese
  • 1 oz peppers
  • 1/2 oz onions
  • 1/2 oz matchstick carrots
  • Honey Lemon Vinaigrette (1 Tbs. honey, 1 Tbs. Vinegar, 1 Tbs. Lemon Juice)

Here’s my own recipe for

Honey Lemon Vinaigrette

Ingredients: 1 Tbs. Honey, ! Tbs. Lemon Juice (fresh or otherwise), 1 Tbs. White Vinegar

Directions: Mix ingredients in microwaveable container with lid. Heat for about 5 seconds until honey is melted. Put lid on container and shake to combine ingredients. Then drizzle over a salad or vegetables and Enjoy!

I also had half of a whole wheat pita with 1 Tbs. Peanut Butter with my salad. This salad was delicious, I love shrimp on salads, and the dressing made it taste very light and springy, I’ll definitely be making it again! Unfortunately I had to eat very quickly, because I had to leave for a Pan Hellenic Council meeting at 9pm. This was our last meeting of the semester, and it was actually just a chance to see everyone have a few snacks and get a nice gift from the Head of Greek Life. They had frosted cookies, so I ate one of those while I was there (no pic sorry!). We also got a nice little goody bag of a plastic cup (its a weird tradition) filled with candy, popcorn, and a granola bar. I brought it home to share with Tyler. He got the Kit Kat and the Hershey Bar, I took the two mini packages of Whoppers. Tomorrow Tyler will get the granola bar in his lunch haha. I also took a Diet Coke home with me.

Now I’m finishing off my chocolates from earlier and my Whoppers. I’ll be posting the con’s list for MSU and Pacific tomorrow, I just don’t feel like finishing it tonight.

Tomorrow is my last day of classes as an undergraduate and I could not be more excited! I have all 3 classes tomorrow though, BORING! I’ll do a recap of them tomorrow! Time to give the fiance a little attention after his long day at work!
