I ate lunch around 1, I was starving!

This turkey and colby jack cheese sandwich with honey mustard on half a whole wheat pita with carrots and celery sticks and extra honey mustard for dipping was just what I needed!

I spent most of my day today on the internet looking up wedding and law school housing information. I also paid a few bills online. Don’t you just love being able to pay bills online? I do, it saves me so much time and saves paper too yay!

I went to my housecleaning job and spent an hour and forty five minutes vacuuming, cleaning the kitchen, and cleaning the bathroom. The lady employing me is super nice, she has back problems and is very busy with work so she needs help keeping the house clean, lucky me!

I was soo thirsty after all that cleaning and really needed a snack so I came home drank some Crystal Light (I love those To Go packets), and had 1/2 oz of havarti cheese with a serving of wheat crackers.

This cheese is amazing! Tyler and I bought it last Sunday when we went grocery shopping. We wanted to get a little adventurous in the cheese department, and this seemed like a good one to try. We made a good choice, I must say! Tyler ate a few pieces when he got home from work today and agreed that it was delicious.

Dinner tonight was another culinary adventure, one I shall call Parmesan Noodles with Broccoli and Salmon, too bad I’m not creative with naming my food.

Parmesan Noodles with Broccoli and Salmon (for two)

Ingredients: 5 oz dry pasta (any shape I used rotini and gemelli) cooked according to package directions, 1 cup steamed broccoli, 1 can salmon (6 oz can), 3 Tbs. butter substitute, 8 tsp grated parmesan cheese, salt and pepper*

Directions:

  • Drain pasta after cooking and return to pot but removed from heat. Drain canned salmon and drain water off steamed broccoli.
  • Add salmon and broccoli to pasta and return pot to low heat.
  • Add butter and parmesan cheese to pasta, veggie, and salmon mixture. Cook over low heat for about 2 minutes until salmon and broccoli are heated, stirring occasionally.
  • Season with salt and pepper, and serve.

*This was my first time making this and I wanted to make sure it had enough flavor and that it was enough food for Tyler. In the future I would use 4 oz of pasta for two servings, more broccoli, and less butter (maybe 2 Tbs. instead of 3). I used about 1 tsp of kosher salt and 6 grinds of my pepper mill, which was a good amount, just enough extra flavor.

Tyler has volunteered to start rating my dinners on a scale of 1-10.

I’d probably give this an 8.

Anyways, I had a big glass of skim milk with my serving.

I’ll definitely be making this again, probably with the modifications I suggested above, less pasta, less butta.

On a different note, we decided against going to the concert, despite the nice weather…sad times. We just couldn’t justify $30 in tickets.

I’ve got nothing on the schedule for tomorrow except some intense group training with my personal trainer at 7am. Here’s hoping it doesn’t kill me haha.

Update: After dinner I decided to go for a walk since my workout was so easy this morning. Tyler stayed at home and worked and I walked four laps around the park outside our apartment. It was a great walk, lots of time to think after a sort of rough day. My timing was impeccable also, because it started to sprinkle just as I got to the door to go inside…what luck!

I came home and decided to have a little dessert, 6 Hershey’s Bliss Dark Chocolates.

I’ll be heading to bed soon, tomorrow is Friday…Yay!
