Thai Kitchen

I headed out to my Uncle’s house to weed for two hours.

On the way I had some Utz Blue Ridge Trail Mix for a snack.

I weeded for 2 straight hours, my lower back was killing me by the end.

On the way home I had a Chocolate Raspberry Luna Bar and a Diet Mt. Dew.

When I got home I folded some laundry and cleaned up the place a little bit, then I caught up on some blogs. Dinner was really late, because I wasn’t feeling super hungry, but I knew I needed to eat after my run and weeding.

Tyler wanted Spirals for dinner with brats, so I decided on something simple.

I decided to eat this Thai Kitchen Lemongrass and Chili Rice Noodle Soup Bowl that I picked up at Target on Tuesday.

I threw together some Honey Lemon Vinaigrette to put on a salad.

I made the soup bowl and ate it with a salad that had green peppers, 1 oz shredded colby jack cheese, 1/4 oz almonds, 1.5 Tbs. Honey Lemon Vinaigrette.

I’m going to do a quick review of the Thai Kitchen Lemongrass and Chili Rice Noodle Soup Bowl!

The soup was really easy to make, it just requires adding water to provided recyclable bowl, mixing in the seasonings and oil that are individually packaged, and microwaving it for about 2 minutes.

The lemongrass and chili flavors are very subtle, and I was disappointed that the noodles didn’t absorb more of the flavors. The noodles were also a little more thick and chewy in consistency. I don’t mind the consistency, but I wonder if it would be different if the soup was cooked according to the stove directions (only slightly more complicated than those for the microwave).

The soup has 250 calories, 1 g of fiber, and 4 g protein.  For being so simple, it is pretty sound nutritionally. There are some funny ingredients, however, that I am slightly less than excited about, but it is a boxed meal, so it could be much worse in my opinion.

Overall, I enjoyed the soup. It was filling, but I wouldn’t eat it alone for a meal, and I question how long it will keep me full for. The flavors, although subtle, made the broth of the soup very tasty. I would definitely buy this soup again to have on hand for a quick meal, and would recommend it to others (although not anyone with a peanut allergy, because it is manufactured in a facility that. processes peanuts). I hope that is helpful to you all!

Tyler and I ate a Philly Swirl Popsicle for dessert like last night.

We’ll be heading to be shortly so we can get up for our morning workout. I see a swim in my future yay!
