Breakfast this morning was an attempt at finishing some open foods. I had another bowl of cereal that included 1 serving of Fiber One Original Bran (hello fiber!), 1/2 serving Archer Farms Fruit Mix Granola, 1/4 serving Kashi U Black Currants & Walnuts, and 1/2 cup skim milk. It was a delicious mix and very filling!

After breakfast I got on my running clothes and then ran a few errands to the bank and the pool store. Then I drove to a trail and went for a 5.15 mile run in 46 minutes! I was super pumped after this run even though I was very tired and hot.
I had realized before I went to the bank that today is Wednesday (huge epiphany I know). Then I realized that Wednesday is the Holland Farmer’s Market! So I kept $20 in cash rather than depositing it! So after my run I drove back towards home and stopped on the way at the Farmer’s Market. There were lots of goodies, and I was tempted but I decided ahead of time that I would only spend $15. I ended up with 2 quarts of really delicious looking strawberries, 1 lb of asparagus, and a freshly ground organic Almond Butter from the booth of a local natural foods store! I got to sample the almond butter before I bought it and I must say I’m pretty excited to eat this stuff! I think I made out pretty well for locally grown and very fresh produce and almond butter!

For lunch I decided to use up the rest of my tofu from yesterday, and I was in the mood for some stir fry. I also really wanted some peanut sauce. I steamed some broccoli and carrots. Then I sauteed some garlic in 1/2 Tbs. Olive Oil. I added another 1/2 Tbs. Olive Oil and the rest of the tofu cubed and cooked the tofu and garlic for about 8 minutes. I added the broccoli and carrots back to the pan to heat everything up. In the meantime I threw together a peanut sauce with 1 Tbs. PB, 1 Tbs. lime juice, 1 Tbs. Seasoned Rice Vinegar, and 2 shakes of red pepper flakes. After some thorough stirring I had a smooth peanut sauce, which, I drizzled over the stir fried tofu and veggies! It was AMAZING! It tasted a lot like a semi spicy Thai dish. I’ll definitely be making this again, and I may try it with chicken or shrimp too! I was also pleasantly surprised with how full I felt even hours after eating this!

I had a Flavor Ice Pop and a Diet Mt. Dew while I was working on my uncle’s pool. I didn’t take any pictures of them sorry!
Tyler had a work dinner to go to tonight so I was on my own, which was perfect because I’d really been wanting to try a new frozen item I picked up a few weeks ago. I had an Amy’s Organic Cheddar Cheese Burrito with Rice and Beans with some ketchup that I didn’t use all of. I also had 4 oz of carrots and some Nasoya Dijon Style Sandwich Spread for dipping. This was a delicious dinner. I still have another Amy’s Burrito in the freezer and I can’t wait to eat it!

This took a long time in the oven (I didn’t want to microwave it) but that was ok for today because it gave me time to clean the bathroom and shower. And the flavor and fillingness of the burrito made it totally worth it.
A quick review of Amy’s Organic Cheddar Cheese Burrito.

I picked up this burrito on sale to use as a quick dinner option for nights when I wasn’t in the mood to cook or didn’t have time. If microwaved, this would definitely be quick, however, when cooked in the oven, it takes about an hour to prepare with a recommended cooking time of 50-55 minutes.
As I said before, however, this burrito was worth the wait! I’m not a huge fan of beans, and was concerned when I cut open my burrito to find whole beans. My fear’s were quickly squelched however, when I bit into the burrito and found that the beans did not have any more prominent a role in the burrito than the cheese or rice. There was really a great balance of ingredients and I even found a few peppers in there for extra flavor. I found that cooking it in the oven gave the tortilla a light crispy texture on the ends, which contrasted really nicely with the beans, rice, and cheese that just didn’t want to stay in the tortilla.
I was very happy with the nutrition facts, the burrito clocked in at 300 calories, which I think is great for a frozen quick and easy dinner!
I would definitely recommend this burrito and will be buying it again!
Back to my eats: I hadn’t had any fruit so I decided to have some of the delicious strawberries from the farmer’s market with just a little bit of sugar to kick up the flavor and a Kashi TLC Dark Chocolate Cookie with 1 cup of skim milk for a delicious dessert!

I’m really happy with my eats today. I think the filling lunch was a great idea, and I couldn’t have been happier with how the peanut sauce turned out. You can expect to see it again very soon! I also had a lot of real foods. Overall today was just a great day from my run to my eating, I’m very satisfied!
