I know today is not a holiday, but I figured everyone could use a little Monday cheer after coming back from the weekend!
Breakfast this morning was a bowl of 5 oz of strawberries (what did I tell you about these strawberries!) 1/2 serving of Kashi Heart to Heart Cereal, 1/4 serving Kashi U Black Currant & Walnut Cereal, 1/2 serving Fiber One Original Bran Cereal, a little turbinado natural sugar, and 1/2 cup skim milk.

I spent most of the morning making a few calls, checking emails and blogs, cleaning, and doing laundry.
I had cut up some sweet potatoes this morning because they really needed to be eaten, and I knew if they were already cut up I would be 100x more likely to cook them. So for lunch I made some roasted sweet potatoes and tofu. I tried a little something different and came up with this delicious recipe for:
Brown Sugar Roasted Sweet Potatoes & Tofu
I decided to season the sweet potatoes and tofu using the same combo: paprika and brown sugar.
For the two sweet potatoes I used 2 tsp. brown sugar, 1 tsp. paprika, and a few generous sprays of Pam Cooking Spray all combined and then shaken together in a tupperware container with a lid. For the tofu I used 1 tsp of paprika and 1 tsp of brown sugar and made a rub, which I then literally rubbed on three slices of tofu (half the package).
The sweet potatoes got really nicely coated with the seasoning when I shook them up, so I coated a baking sheet with some more Pam, preheated the oven to 350 degrees and once it was hot put the sweet potatoes in for 20 minutes.

While they roasted, I vacuumed. When the 20 minutes was up, I flipped the potatoes, and put them back in for another 15 minutes.
While the potatoes finished cooking I heated up a small pan over medium-high heat with some more Pam. Once it was hot I placed all three slices of seasoned tofu in the pan and let them cook for about 3 minutes on each side, until they had a nice browned color.

Once the potatoes were done, I measured out 5 oz of roasted sweet potatoes and plated them with the tofu! I also had a little ketchup on the side for extra flavor.

This was a really satisfying lunch and was soo easy to make!
I’ve got a few different errands to run this afternoon, then I’m heading to Hemlock Crossing Park for a nice trail run! I can’t wait! Have a great afternoon and evening and I’ll be back later for some dinner!

Yummm the brown sugar combo reminds me of a sweet potato casserole from Thanksgiving. My favorite!
