There’s only one more day until Tyler and I drive to Sacramento! We’re leaving tomorrow (Friday morning) and driving to South Dakota.
Yesterday’s lunch was an english muffin with hummus diced hot cherry peppers and peanut butter filled pretzels.

I was feeling super snacky (probably because of my not so hot diet-I miss fresh fruits and veggies!) this afternoon, so I had the following snacks about 2 hours apart befor dinner: a Kashi GoLean waffle with cinnamon sugar, one serving of peanut butter pretzels, and a slice of wheat bread with hummus.



Tyler and I drove to the beach house to have dinner with my dad. I started off with a small glass of this Sangiovese.


We ate our salads while we waited for the lasagna to finish cooking. Mine had a lettuce mix with Craisins, croutons, grated parmesan, and Light Raspberry Vinaigrette.

Dinner was Stouffer’s lasagna. I had about 1/4 of the lasagna and 2 pieces of really good ciabatta bread with SmartBalance spread.

Dessert was strawberry and blueberry shortcake with a little light fruit dip on top.

This morning I woke up and decided to do my long run of the week today instead of Sunday, because most likely I wouldn’t be able to get it in on Sunday since we’ll be driving through Wyoming that day.
I ate a Kashi waffle with butter spray and a little organic maple syrup to tide me over.

After cleaning up the loft a little bit and running a few errands, I drove to the track at a nearby school. I’ve been running on the track there to try and pace myself better and to get a feel for the pace that I think I want to keep for the half marathon in October. I ran 20 laps, or 5 miles in 44:50, so just a little bit under a 9 minute mile. I felt awesome and so proud of myself after this run!
When I got back it was time for some lunch! I had a repeat of yesterday, an english muffin with 1.5 oz hummus and a serving of peanut butter filled pretzels.

I’ve got some more errands to run today, a lot of packing to do, and of course cleaning myself up after than run haha.
Some friends are coming over for wine later today, and I’m cooking Tyler a steak that I defrosted for dinner. We’ve also got to drive to the beach house to drop Tyler’s car off there tonight, so that we don’t have to take care of it in the morning. Lots to do!

I know what you mean about feeling “off” when you don’t have your normal fruits & veggies! I start to CRAVE salads!!
I definitely understand what you mean when you say lacking the fruits and veggies. They just make us feel so good

I haven’t had much fruits or veggies in my travels, and it shows…I can’t poop as well! Wail!
My gosh all your waffles are making me CRAVE them!!! I think i’m going to have to go back to WF and get me some of those Van’s mini chocolate chip waffles tomorrow.
