Eggs and Rice

I started the day off with 15 minutes of strength followed by 15 minutes of stretching (Hal told me to).

Here’s the breakdown – I did this set of 5 moves 3 times with a short rest in between (I used 5 lb dumbbells):

  • 12 Lunges with bicep curls
  • 12 Overhead presses
  • 12 (each arm) Tricep kick backs
  • 12 push ups
  • 12 (each leg) Side holds with hip abduction (leg lift while doing side plank)

I did a variety of stretches. I also included a 3 yoga flows and a yoga hip stretch. It felt fabulous!

After a shower, I got some breakfast. I had 2 Kashi Go Lean Waffles with 1 Tbs. Real Maple Syrup and 3 oz raspberries.

After breakfast I went to class.

I brought this packed lunch which I ate after class. I had 5 oz carrot sticks, 1 oz colby jack cheese, 1 serving Kashi TLC Fire Roasted Vegetable Crackers, a Clif Kid Mixed Berry Twisted Fruit, and a Clif Blueberry Z Bar (eaten later).

What can I say, I’m a Clif Kid…at 22.

After class I stayed at school until 3:30 for a reception with the dean for my 1L section. I shared some peach rings during a study session with some friends, then at the reception I had a chocolate cookie. Sorry no pics friends. But look what came in the mail for me today!

A sample of Kashi Honey Sunshine Cereal (plus about 5 coupons for $1.50 off a box yay!) I can’t wait to try this stuff, it looks like puffins! 

Dinner was a cucumber and carrot salad with 365 Ginger Soy Vinaigrette and rice vinegar.

The main course was rice (2.25 ounces uncooked) and 2 fried eggs with kosher salt and freshly ground pepper.

I let the runny yolk mix into the rice and cut the egg into pieces so it was all mixed together, sounds weird, but it’s so good I swear! I’ve always loved eggs and rice together, and when I was planning meals it just came to me, so I put in on my meal plan twice because it’s such a simple and cheap meal!

Dessert was a No Pudge brownie and strawberries.

I’m off to do some more homework now. I’m trying to get a few of Wednesday’s assignments done so that I’m not swamped with them tomorrow. The goal is to stay ahead of the game!

    i have NEVER had eggs with rice! never even thought of trying that but i bet it tastes great, especially with the runny yolk. good luck with the assignments!

    Mmm waffles! Eggs and rice sounds interestingly good! I’ve had egg in stir fry’s on top of rice?! Mmm!

    AHHH! Eggs and rice!! that is sooo Asian, I love it!! My Taiwanese best friend and my Malaysian guy friend both eat that all the time!! It is really popular!!

    Love the carrot and cucumber salad too! In fact, you are kinda making me crave a cucumber right now!!!

    koreans eat eggs and rice like that all the time…They add a dash of soysauce and sesame oil, and also toasted shredded nori! Try that, you’ll be BOWLEd over! :D
