Today has been another really good day.
But real quick, here is a pic of last night’s dessert…a No Pudge Brownie with a serving of Stonyfield Creme Caramel frozen yogurt, just as I promised! It was soo good! I ended up freezing half the brownies so that they wouldn’t go bad and so that I wouldn’t be tempted to eat the whole pan in one day : )

I didn’t wake up until 9am. It was fabulous! After I woke up, I folded some clothes, then got my biking clothes on, and went downstairs to get everything ready for a bike ride (water, phone, insurance and ID). I was going to bring a Clif Z bar with me, but I didn’t have room : (
I ate a banana before I left.

I rode to the American River trail (2 miles there), rode for 11 miles on the trail, and then rode back to my apartment (2 miles). It was a great 15 mile ride. This is the first cross training I’ve done in awhile, and it was definitely a hard ride. I was super jealous of all the people zooming by on road bikes…I have a cross bike and its hard to go over about 12-13 mph without really working it (I’d be hurting). My bike is also desperately in need of a tune up, I can’t even get into the third gear…YIKES! And I still need to buy a helmet…I’m on a tight budget right now, but I may go pick one up from REI tomorrow.
After my ride I preheated the oven and then popped in a frozen Amy’s Teriyaki Wrap.

The hour that it took to cook was torture, I was famished after the ride, but I didn’t want to spoil my tasty lunch so I waited. I used the hour to shower and peel some carrots. During my wait, the doorbell rang. It was the awesome post man with a package for me!

Weeds Seasons 1-3
He has the Weeds episodes downloaded on his laptop, so he bought me these so we can watch the show together! I got a preview the other day and I think I’m really going to like the show!
Lunch was finally ready at about 2pm (yea now you understand why I was so hungry!). I had the Amy’s Teriyaki Wrap with ketchup (didn’t need to use, but I love ketchup), 3 oz of carrot sticks and 2 oz of Sabra’s Red Pepper Hummus.

I probably should have eaten something to help myself recover better…live and learn.
Around 3 I ate this Clif Kid Tropical Fruit Twisted Fruit! Yum!

After that I napped on the chair and a half (it’s a huge chair, I love it!) for a little while…food coma.
Then I worked on some homework and ate a snack. I made myself some trail mix using 1 serving Barbara’s Shredded Spoonfuls, 40 g dried cranberries, and 1 oz raw cashews. Too bad I didn’t have any chocolate chips!

I was able to do some more homework during the rest of the day. I’m trying to stay a day or so ahead of my assignments so that I still have time to run and do other things besides just eating, sleeping, and studying.
Dinner tonight was Italian style. I made 3 oz whole wheat penne pasta with 3/4 cup Ragu, 2 oz sauteed mushrooms and peppers, some onions, garlic, 1/2 Boca Original Vegan burger – crumbled, and of course some Parmigiana Reggiano grated on top!

I spent the last hour or so catching up on blogs, and cleaning up the kitchen from dinner. Now I’m having my very own at home movie night. I’m going to watch first episodes of Weeds Season 1. I’ve got some SweetTarts for my movie treat : )

I’m sure I probably sound like the ultimate homebody the past few days, but with everything else going on, I’m really enjoying all this time by myself. The second week of law school was tough and this weekend of relaxation and peace is just what I needed to restore my sanity and give my attitude a little pick me up.
Tomorrow I’ll be up at 7 or 8 for my 7 mile run!

How’s that caramel ice cream?? I was deciding between that and the cookies & cream last time. Wasn’t sure if the caramel would have that yucky low-fat “fake” caramel taste!
