Simple Couscous Salad

I have been going non stop all day…blech!

I barely had time this morning to make breakfast and lunch, but I somehow managed it.

Breakfast had to be quick so I threw together with a SunButter & Strawberry Spread Thin. YUM. I used my free sample of SunButter, and wow was it good! Super YUM!

Lunch was an awesome combo – I used leftover pasta (1 oz dry worth), lettuce, peppers, carrots, feta cheese, and balsamic vinegar to throw together a fantastic salad! The balsamic vinegar and feta cheese complimented each other very well!

I also had a peach with my lunch and a mini bag of M & M’s!

Afternoon snacks included my sample Clif Mojo Bar, a Clif Kid Twisted Fruit, and an Apple Heart Thrive. I was feeling super snacky today in case you can’t tell.

When I finally got home around 6:25, I took care of a few things and then made my dinner. I made a very Simple Couscous Salad using:

  • 3.5 servings couscous (cooked)
  • 4 oz feta cheese
  • 15 oz can garbanzo beans (boiled for 3 minutes)
  • 1 small cucumber cut up in small chunks (about 5 oz)
  • 1/2 large red pepper cut in pieces (bigger than diced)
  • 1 Tbs. extra virgin olive oil
  • Salt and Pepper to taste

I mixed everything together in a bowl and then split it up into 4 servings (about 430 calories/serving).

It was delicious! I’m very glad I have leftovers! They’ll definitely be making an appearance for lunch tomorrow : )

Dessert was a No Pudge Brownie from the freezer, and 2 vanilla meringues…yum! and 3 small squares of the Green & Black Mint Dark Chocolate…It was a very LONG DAY!

My brother will be getting here shortly – he came out to Cali for a couple of days. I wish I didn’t have class tomorrow so I could hang out with him more, I think he may go to San Fran tomorrow. Can we say jealous!

    i love the combo of couscous and garbanzos together! so good. i bet that salad was amazing. i love sunbutter as well!

    I don’t think I’ve had couscous but it looks like an interesting grain.
    Green And Black chocolate is on this weeks sales at Whole Foods. I’m excited, I’ve still got a ton from Newman’s Own Organic but they don’t have a mint variety so I think I’ll pick up a mint Green and Black

    Oh my goodness, I love No Pudge brownies.. I could easily eat half of the pan… dangerous!

    I love the salad you threw together. We are kind of low on things at home right now, so I may be throwing things together too! Sometimes those are the best meals though :)
