A Rainy Monday

So I had a few more eats yesterday that didn’t make it into the post, since I did it before dinner so here they are.

Snack: Alexia Cheddar Waffle Fries

I got these at Target because they were on sale and I had a coupon. They  have a great crunch to them, and aren’t too bad nutrition facts wise. They would definitely help satisfy a craving for cheesy fries.

Dinner was Annie’s Shells and Real Aged Cheddar (made with 2 Tbs. unsweetened soymilk and 1 Tbs. I Can’t Believe It’s Not Butter) and 1/2 cup pumpkin with some salt and brown sugar.

The small amount of butter really made a huge difference in the mac and cheese. This will be my new go to method for making Annie’s. And I never thought I would like it as much as I did, but some pumpkin with a little extra flavor makes a great vegetable at a meal! Kind of like eating sweet potatoes or squash.

Dessert was 1.5 servings Trader Joe’s Chocolatey Cats Cookies and 1/2 serving Dark Chocolate Mints. YUM!

I woke up to a rather dreary looking day here in California. I wasn’t really in the mood but I got my running clothes on and got out to my car only to discover that it was drizzling. I bucked up and drove to the trail anyways. My quads were very very tight, so I only did 3.5 miles (did I just say only – excuse me). Let me start that over. I ran 3.5 miles in 31:30 minutes in the rain, and I’m very grateful to be able to run that far. Much better – sorry for the chain of thought : )

I was a little soggy by the time I made it back, but thanks to some technical fabrics I dried quickly.

When I got home I stretched A LOT and did 50 backwards leg extensions per leg, 25 “fire hydrants” per leg, and 50 regular leg lifts per leg.

Breakfast was very “rainy morning” appropriate. I used the last half serving of pumpkin to make some pumpkin oatmeal using 1/2 cup oats, 1 cup water, 1/4 cup pumpkin, 7 g walnut pieces (50 cals worth), and 2 tsp. brown sugar. And some Green Tea –  Such a good breakfast!

Torts went well today. After class I stayed on campus and ate Paella Vegetariana leftovers with Megan and Julia for lunch (sorry no new pic) and did some Torts homework for Wednesday.

When I got home I snacked on a little baby size apple (I LOVE these tiny apples! – they are the perfect size for a snack).

Around 5 I ate 1.5 servings of Annie’s Cheddar Bunnies.

Dinner was another very fall meal – 2 small sweet potatoes tossed with 1/2 tsp olive oil and salt and roasted for 15 minutes at 350° and 1 cup of broccoli with 3/4 oz cheddar cheese melted on top.

I definitely got my veggies in today!

Dessert was a serving of Trader Joe’s Chocolate Cats Cookie and 1 serving of Dark Chocolate Mints.

On a different note, I’m feeling much better about my sweets intake for the past few days. Last week was a very busy and very hormonal week, and I think that is why I was eating SOO many sweets. The past few days I’ve been trying to focus on eating more substantial foods and not eating so many empty calories. I realized that of course I’m going to be hungry if I’m skimping on real meals to save up for the fact that I’m going to want to eat a bunch of sweets late at night. I also think eating naturally sweet foods (pumpkin, sweet potatotes, apples, any fruit really) has helped me satisfy those mid day sugar cravings and keep from going overboard at night.

My goals for this week:

  • Strength Training x 2
  • Hip/Leg Exercises x 3
  • Hydration – 60 oz/day
  • Monitor Sweets Intake
  • At least 7 hrs of sleep/night

    haha Deej (my mom) would be SO proud of your Cats intake :) I think she loves them more than her own daughter. If you like gingersnaps the ginger flavor has a great taste!

    I need to jump on that “monitor sweets intake” and “at least 7 hours of sleep” bandwagon… I eat way to many sweets!! I love your cats cookies and chocolate mints though!

    I looove pumpkin oatmeal on rainy days. I don’t know why but terrible weather really makes it taste better
