The highlight of the week, besides getting to have Tyler here, was this delicious pumpkin bread that I baked.
I used Trader Joe’s Pumpkin Bread Mix.

I followed the directions on the box, making it with 2 eggs and 1 cup of water, except I replaced the 1/2 cup oil with 1 cup of organic canned pumpkin.

I baked the loaf for 65 minutes at 350°. The apartment smelled delicious while it was baking!

I’ve been eating this bread all week, for breakfast, lunch, and dessert.

Wednesday Dessert: 2 Pieces of Pumpkin Bread and 3 Newman's Own Organics Cinnamon Hermits (big dessert, because I didn't get many calories in earlier that day).

Thursday Breakfast: 2 Pieces of Pumpkin Bread and 1 Tbs. Creamy Peanut Butter

Thursday Lunch: Lavash Hummus and Veggie wrap, Annie's Cheddar Bunnies, Clif Chocolate Chip Z Bar, and an Apple

Thursday Afternoon Snack: Pumpkin Bread

Tyler only gone one piece of the Pumpkin bread, probably because I demolished it quickly by myself!
Well Tyler and I are off to class. It’s take your fiance to class day here…not really but we’re allowed to bring visitors so I’m dragging Tyler to Civil Procedure! Love it!
After class we’re heading to Napa Valley and then to San Francisco to visit there for the weekend!
