Thai Food and New Moon

Today was a fantastic day – no doubt about it.

Breakfast: Plain Chobani, Kashi Heart to Heart, 365 High Fiber Cereal, and an apple.

Followed by my LAST CLASS OF THE SEMESTER! Yep you heard that right, I have no more mandatory classes for the rest of the semester. I do however, have a lot of exam review sessions and of course the actual exams, so I am nowhere near done.

After class I ate this Clif Z Bar to give me a little energy.

Then I got my sweat on at the gym with 45 minutes on the elliptical and 45 minutes on the treadmill. It was a fantastic workout!

Once I got home, I got around to making lunch/an afternoon snack. I had some tofu in the refrigerator and decided to try something new with it — enter scrambled tofu with green peppers on a pita with Light Laughing Cow.

Scrambled tofu really does taste a lot like eggs! I will definitely be using scrambled tofu for more things in the future!

Then came the exciting part of the day!

I picked Julia up at 6:30 for our dinner and movie girls night!

We went to an old favorite Amarin Thai (third time eating there). We started off with some soup (which I can’t spell the name of).

It had a light but slightly creamy broth with chicken, mushrooms and lemongrass. Julia let me have all the mushrooms – love me some mushrooms!

For my entree, I ordered the Vegetarian Path Thai (Pad Thai). It was that or drunken noodles, and the Path Thai won out.

Julia ordered the Sweet and Sour Chicken.

We both shared – I love sharing!

I was again super impressed with Amarin Thai – our server was very nice and great about refilling our waters (I appreciate these small gestures).

After dinner, we drove to Target to pick up gifts for an Angel Tree at school. It took us a long time to find what we wanted, but we left with some good stuff.

Then it was time for the highlight of the night: New Moon!

The movie was AMAZING! I may have walked out of the theater drooling. There were parts of it that I was surprised by, but that happens anytime you read a book which is made into a movie.

I’ve decided that Edward and Jacob are both hot in their own ways. However, I’m definitely on Team Edward…forever.

I can’t wait  to go see it again…sigh.

I drove Julia home after the movie, then headed home myself.

When I got home, I put my Thai leftovers in the fridge and wat I sent to check my email. After thinking about them for about 5 minutes, I decided that I should just eat them. So I warmed em up in the micro and dug in.

No regrets here : ) Love me some Path (Pad) Thai.

And now I’m heading to bed. I have lots of errands to run tomorrow to get ready for Thanksgiving – REI to pick up my race packet for the 10k Run to Feed the Hungry on Thanksgiving, Trader Joe’s, the bank, maybe an oil change, and some form of activity – maybe the elliptical or a bike ride so I don’t wear myself out  for the 10k on Thursday.

I’m sure you’re curious about my Thanksgiving Plans. Thursday morning I’ll be heading to Megans apartment, and then racing (or at least trying to – apparently this run is super crowded) the Run to Feed the Hungry 10k. After the race, I’m heading back to my place to whip up some more Brûléed Mashed Sweet Potatoes. Then Julia and I are heading to Thanksgiving dinner with Megan’s family. Megan invited us to come to her sister’s house for Thanksgiving, since we both had no plans. And the rest of the day will be spent eating great food and being thankful. Should be a great day, and I’m super excited to get another race in.

Well I need to get to bed since it’s almost 1 am. Have a wonderful Wednesday!

    mmmmmmmmmmmm pad thai. and heck yes team edward! i will be on his side…forever. as they say “once you go edward, you never go back.” (or something like that)

    have a wonderfully delightful thanksgiving and goodluck on the 10k!!! i will be doing the 10k rudolph ramble in the ridiculously cold chicago in just a few weeks!!

    Boo, I still have one more week of class after this before exam period, lucky duck haha.

    I love that “last class” feeling. Even though you have tests, you feel so much more free – the end is in sight! Good luck with the end of the semester!

    How did you know I was curious about your Thanksgiving?! That sounds like a lot of fun! I bet you will have a great time :)
